Elsa Carrillo, MS, RDN, CDCES has been a practicing Registered Dietitian Nutritionist (RDN) for over 6 years in various clinical settings, and community and wellness programs. Additionally, Elsa holds a certification as a Certified Diabetes Care and Education Specialist (CDCES), and holds extensive training in obesity and weight management. Elsa specializes in working with patients with diabetes, prediabetes, gestational diabetes, non-alcoholic fatty liver disease, PCOS, and weight management.
Elsa is dedicated to promoting optimal health outcomes through evidence-based nutrition. Elsa prides herself in making clients feel heard and seen by fostering a supportive and safe environment. Elsa believes in empowering clients to lead their care.
Elsa received her bachelor's degree in International Development from University of California Los Angeles. After graduating from UCLA, Elsa served as a Peace Corps volunteer in Burkina Faso (Sub-Saharan Africa), where she worked with local stakeholders, women, and girls to create school retention and empowerment programs, and a woman's wellness group where she led nutrition workshops, and collaborated with village women to grow consciousness about malnutrition, and native food resources rich in micronutrients that could help prevent the endemic issue.
Upon returning to the states, Elsa struggled with her weight and gut issues. Elsa decided she wanted to get her health and life back, but not rely on fad diets or life-long medications to do so. So she decided to become educated on the fundamentals of good health, and dived deep into nutrition. She obtained a Master of Science in Nutrition, Healthspan, & Longevity and completed her dietetic internship from the University of Southern California's Leonard Davis School of Gerontology. And after years of tweaks and consistency, Elsa has been able to gain her health back.
Elsa enjoys traveling, cooking, hiking, & exploring new cuisines. Her values center around compassion, integrity, and the pursuit of knowledge, which she strives to embody both personally and professionally. Elsa is genuinely interested in helping others achieve their health goals, and is particularly passionate about working with individuals with diabetes, helping them navigate their dietary choices while empowering them to lead fulfilling lives. With the right support and education, everyone can achieve better health outcomes, and Elsa is dedicated to being that resource for her clients.
