Karen Lau, MS, RDN, LDN, CDCES is a nationally and internationally recognized diabetes nutrition expert with over a decade of experience. She is one of the authors of the national diabetes nutrition guideline.
Karen has helped hundreds of people with prediabetes and diabetes (type 1, type 2, and gestation), with a specialty in serving people of cultural minority and immigrants to the country.
Originally from Hong Kong, Karen has first-hand experience knowing how challenging it is to juggle a different food culture while trying to stay healthy. Too often, she has seen her clients giving up their cultural foods because they were told “they aren’t good for your blood sugar”, and losing joy in food. This has become her passion for helping people to honor their culture while keeping their diabetes at goal.
Her core nutrition belief is that ALL foods can fit into a “diabetes meal plan”.
