Roasted Garlic and Herb Salmon

Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1 head of garlic, top sliced off to expose the cloves
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh herbs (like parsley, dill, rosemary, or a combination)
  • Salt and black pepper, to taste
  • Lemon wedges, for serving
  • Freshly chopped herbs, for garnish

Instructions

  1. Prepare Oven: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or foil.
  2. Roast Garlic: Drizzle 1 tablespoon of olive oil over the exposed garlic cloves. Wrap the garlic head in foil and place it on the baking tray. Roast in the preheated oven for about 10 minutes.
  3. Season Salmon: While the garlic is roasting, pat the salmon fillets dry with paper towels. Drizzle each fillet with the remaining olive oil and lemon juice. Season with salt and pepper.
  4. Herb Mixture: In a bowl, mix the chopped fresh herbs. Once the garlic has roasted for 10 minutes, remove from oven, carefully open the foil, and squeeze the softened garlic cloves into the bowl with herbs. Mix to create a paste.
  5. Apply Herb Mixture: Spread the garlic and herb mixture over each salmon fillet.
  6. Roast Salmon: Place the seasoned salmon fillets on the baking tray, skin-side down. Return to the oven and roast for an additional 10-12 minutes, or until the salmon flakes easily with a fork.
  7. Serve: Transfer the salmon fillets to plates, garnish with additional fresh herbs and serve with lemon wedges on the side.
